Dal Kofta (Green Gram Balls)
Recipe to prepare “Dal Kofta”: Ingredients: 1. split green gram – 150 to 200 gms 2. ginger – 1 inch 3. green chilly – 2 4. asafoetida – 1 pinch 5. salt – to taste 6. red chilly powder – 1-1/2 tea spoon 7. turmeric powder – 1/2 tea spoon 8. crushed dry fenugreek (kasoori methi) – 2 tea spoons 9. seasoning (garam masala) – 1/4 tea spoon 10. cooking or refined oil – ample quantity (to deep fry) 11. cumin seed – 1/2 tea spoon 12. garlic – 10 cloves 13. onion – 4 medium bulblets 14. curd (yoghurt) – 4 table spoons 15. coriander powder – 1 tea spoon 16. tomato (chopped) – 3 medium size 17. water – 4 to 5 medium bowls Procedure: 1. soak (150 or 200 gms) split green gram in ample water for approx. 5 hours 2. later, grind or strain it into a thick paste 3. add to the paste- a. grated ginger (1/2 inch) b. 2 chopped green chillies c. a pinch of asafoetida d. salt to taste e. 1/2 tea spoon red chilly powder f. 1 pinch turmeric powder g. 2 tea spoons crushed dry fenugreek (kasoori methi) h. 1 pinch seasoning (garam masala) 4. blend all the ingredients properly 5. heat ample quantity of cooking or refined oil to deep fry 6. squeeze small portions of lentil paste in the oil 7. flip the kofta balls, and fry until brown 8. for gravy, grind the following ingredients- a. 1/2 tea spoon cumin seeds b. garlic (10 cloves) c. ginger (1/2 inch) d. chopped onion (1 medium bulblet) e. add little water 9. fry julienned onion (3 medium bulblets) until brown 10. add to it the gravy paste, and stir …
