Recipe to prepare “Murg Khada Masala”: Ingredients: 1. chicken 2. garlic – 10-15 cloves 3. ginger – 1 inch 4. green chilly – 3-4 5. onion – 3 medium bulblets 6. turmeric powder – 1/4 tea spoon 7. coriander powder – 1 tea spoon 8. red (kashmiri) chilly powder – 1 tea spoon 9. cooking oil – 2 table spoons 10. clove – 3 buds 11. 1-1/2 inch cinnamon 12. mace (javitri) – 2-3 13. cardamoms – 2 14. star anise (chakra phool) – 1 small piece 15. black cardamom – 1 16. black pepper (whole) – 4-5 corns 17. stone flower (dagad phool) – 2-3 pieces 18. bay leaf – 1 19. nutmeg (jaayfal) – 1 20. salt – to taste 21. water – 1 medium cup Procedure: 1. grind the following ingredients into a paste: a. 10-15 garlic cloves b. 1 inch ginger c. 3-4 green chillies d. diced onion (1 medium bulblet) e. 1/4 tea spoon turmeric powder f. 1 tea spoon coriander powder g. 1 tea spoon kashmiri red chilly powder 2. heat 2 table spoons cooking oil in a cooker 3. add the following (whole) spices: a. clove (3 buds) b. 1-1/2 inch cinnamon c. 2-3 mace (jaavitri) d. 2 cardamoms e. 1 small piece star anise (chakra phool) f. 1 black cardamom g. 4-5 black pepper corns h. 2-3 pieces of stone flower (dagad phool) i. 1 bay leaf j. 1 grated nutmeg (jaayfal) 4. let the spices cook for a little while on low flame 5. add finely chopped onion (2 medium bulblets) 6. let the onion fry until brown 7. add the paste (prepared intially) 8. stir the paste and chopped onions properly 9. add chicken pieces 10. keep on stirring for …
